Stuffed Bell Peppers

Ingredients

  • 1 cup brown rice, rinsed and cooked ahead of time
  • 6 green bell peppers
  • Avocado oil for sauteeing
  • 1 pound ground beef
  • 1 cup chopped onion
  • 8 ounces tomato sauce
  • ½ tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 green onion chopped

Directions

  1. Preheat oven to 350F.
  2. Prepare the bell peppers. Remove the tops by slicing them off. Remove the seeds inside and rinse out any other seeds. Make sure they can stand up on the baking dish. You can slice a bit off the bottom so it can stand up and not tip over. Note: do not cut too deep, as that will cause the filling to leak out during baking.
  3. Boil green bell peppers in a large pot of hot water for about 1 minute to partially cook them. Remove the bell peppers using tongs and allow to cool. Stand the bell peppers together in a lined baking dish.
  4. Heat 1 tablespoon of oil in a large skillet. Saute ground beef until partially browned. Add onion and saute another 5 minutes until onions are translucent. Add tomato sauce into the mixture and stir. Add the cooked rice and stir until evenly distributed. Next add salt, pepper and garlic powder. Stir all the contents until well mixed. They are now ready to be placed inside the bell peppers. Scoop this mixture into the bell peppers, filling each bell pepper to the top. The bell peppers should be next to each other in the baking dish. Line the stuffed peppers together in the baking dish.
  5. Bake the dish of stuffed bell peppers for 25 minutes in a 350F oven, until the tops look evenly browned. Remove the dish from the oven. Top each stuffed bell pepper with chopped green onions and enjoy.
