Lūʻau Quesadilla

Ingredients

  • 2 whole wheat tortillas
  • 3/4 cup shredded cheese
  • 1/2 cup cooked lū’au leaves
  • Lightly salt and pepper to taste
  • Sour cream
  • Salsa
  • 1 tbsp of olive oil

 

Optional:

  • Small size tortilla is easier to flip and makes more quesadillas.
  • Add diced tomatoes or other vegetables.
  • Lūʻau can be substituted with spinach or other vegetables you have on hand.
  • The quesadilla goes well with hot sauce.

Directions

  1. On top of a tortilla add: cheese, lū’au leaves, and a pinch of salt.
  2. Add one more layer of shredded cheese before covering with another tortilla.
  3. Add olive oil to pan.
  4. Pan fry the quesadilla until cheese is melted and the tortilla is lightly browned on both sides.
  5. Cut the quesadilla into triangular pieces.
  6. Serve with sour cream and salsa.

 

How to Prep Fresh lū‘au leaves:

Wash leaves, debone, and cut into strips. Then boil in water with a dash of salt for 20 minutes.
