Macadamia Nut Encrusted Fish

Ingredients

  • 2 T oil (ideally avocado or macadamia oil)
  • 4 fish filets (e.g. mahi mahi, ono, kanpachi)
  • ½ cup macadamia nuts, finely chopped
  • ¼ cup flour
  • ½ tsp salt (if using unsalted macadamia nuts)
  • 1 egg, beaten in a shallow bowl

Directions

  1. Heat the oil in a large skillet over medium-high heat.
    Combine the flour and salt (if using) in a shallow bowl or plate.
  2. Dip the first fish filet in the flour mixture to lightly coat. Remove from flour and dip the filet in the beaten egg to coat. Finally, dip one side of the filet into the chopped macadamia nuts. Place the filet into the heated skillet, nut side down. Repeat with the remaining filets. Saute both sides of each filet until lightly browned and fully cooked.
  3. Tip: The macadamia nuts can burn quickly if the heat is too high. Use a medium to medium-high heat and cover the skillet while cooking the fish to aid in cooking the filets.
  4. Serve with sides of choice: brown rice, sweet potatoes, leafy green salad.
