Lūʻau Omelette

Ingredients

  • 1/2 cup tomatoes (diced)
  • 1/2 cup onion (diced)
  • 6 pieces of shrimp (peeled)
  • 6 eggs
  • garlic salt and pepper to taste
  • 2 Tbsp olive oil
  • 3/4 cup cooked lū’au leaves
  • 1/2 cup shredded cheese

Optional:

  • Add chicken bouillon, or salt and pepper to season eggs.
  • Lū‘au leaves can be swapped with spinach.
  • Shrimp can be swapped for another protein.

Directions

  1. Dice the tomatoes, onion, and shrimp, and set aside.
  2. Whisk eggs in a bowl and season with garlic salt and pepper to your liking.
  3. Heat butter in a frying pan and pour in eggs. Add in tomatoes, onion, shrimp. and lū’au leaves. Spread evenly.
  4. When the egg has begun to cook on the bottom, flip over and continue cooking, until everything is cooked through.
  5. Serve on a plate and sprinkle with cheese.

 

How to Prep Fresh lū‘au leaves:

Wash leaves, debone, and cut into strips. Then boil in water with a dash of salt for 20 minutes.
