Hawaiian Chicken Curry

Ingredients

1 package NOH Hawaiian Style Curry Mix (11/2 oz.)

1 1⁄2 cups water

1 lb. sliced cooked chicken

2 cups carrots

2 potatoes

1 onion

2 celery stalks

2 tbsp. olive oil

½ tsp. Salt

½ tsp. Pepper

 

Optional: dash of mirin, dash of vinegar, hot sauce

Directions

  1. Chop vegetables in similar sizes (e.g. 1 inch pieces) for even cooking (e.g. potatoes, onions, carrots, celery, other veggies in your fridge).
  2. Lightly season chicken with salt and pepper.
  3. Lightly sauté chicken with olive oil until its brown. Set cooked chicken aside.
  4. Combine contents of package with 1 1⁄2 cup water and mix well.
  5. Over medium-high heat, stir constantly until curry sauce thickens and boils.
  6. Combine with the chicken and vegetables. Simmer on low heat until the vegetables are fork tender.

Recommendation: Serve with rice.
