Ingredients

  • Avocado or olive oil for sauteing, about 1 tablespoon
  • 4 eggs
  • 1 whole tomato, chopped
  • 1 bell pepper, chopped
  • 1 green onion, chopped
  • 2 cloves garlic, minced
  • 2 dashes garlic salt
  • 1-2 tablespoons ketchup
  • ½ teaspoon sesame oil
  • Optional: Cucumber, sliced

Directions

  1. Prepare the eggs. Place 4 cracked eggs into a bowl and beat eggs with a fork until well incorporated.
  2. Heat 1 tablespoon of avocado or olive oil in a medium skillet at medium high heat. Pour the eggs into the skillet. Using a spatula, stir about the eggs to evenly cook the eggs until firm. Remove eggs from the skillet by placing into a dish; set aside.
  3. Heat 1 tablespoon oil in the same skillet at medium high heat and saute green onions and bell peppers for about 3 minutes. Add tomatoes and saute for 1 minute, stirring throughout. Add the eggs back into the skillet and stir to mix in the vegetables with the eggs. Add garlic salt, ketchup, and sesame oil. Stir until evenly distributed.
  4. Serve with brown rice and sliced raw cucumbers.
